Straightforward complexity. Simple ingredients beautifully put together in a pot (visually and to taste) to marry with each other and create a welcoming brunch. The yolk was of a perfect texture, the bits of chorizo in the mix and machego queso on top added a depth and freshness to the dish and the bread was perfect for mopping up afterwards to avoid any leftovers. #eatenonholiday
