MEATLESS “MEAT” SAUCE WITH CHICKPEAS AND MUSHROOMS (ACCIDENTAL VERSION)

First time making vegan pasta. The texture of the sauce was meat-like thanks to the addition of pulsed chickpeas. I inadvertently used canola oil instead of EVOO so maybe that’s why it felt like the sauce lacked depth of flavor? Will have to try it again with with EVOO next time. Enough to tide me through the week!
