By far my most rewarding sourdough bake. Letting it proof 12 h @ 26 C was well worth the risk, even if it meant napping at 30 min intervals overnight to monitor this time bomb! Forget pain barrier, it’s the “fear of over-proofing” barrier I’ve had to overcome all this time! I was a tad ambivalent about adding fennel but I’m so glad I took the plunge because it took already excellent bread to a whole other dimension with its very pleasant aniseed-y undertone .
